I already have the main theme from 2/3 US in midi format.
I'm also using Aeris' theme.
What else is worth collecting?

Dude. FF4/2US battle theme. And Rachel's theme from 6/3US. And Locke's theme. And Awakening. Possibly Dancing Mad, too. And One-Winged Angel- the good orchestrated one with the vocals, not the shitty synthed MIDI. That is all.

The Black Mages are a band who cover Final Fantasy songs in a hard rock-esque style.
However, my favorite OST from any Final Fantasy is Man with the Machine Gun from FFVIII.
I also recommend remixes from overclocked, occasionally, there is a gem or two.
FFVIII easily has the best OST out of all the Final Fantasy's. Many, many songs are wonderfully orchestrated.
However, if you aren't a Sony generation FF player, you're shit outta luck, really (save for FFVI).

If you get a chance, listen to the Pray and Love Will Grow vocal albums. Very cool arrangements. I heartily recommend the live albums for V (Dear Friends) and VI (Grand Finale). IV is so-so if you don't mind Celtic music. Look for the Symphonic collection if you can as well (it's fairly rare unless you know where to look). It's sort of the live album for the NES-gen games, although there was that one for III, but it was mostly like a drama CD with live tracks mixed in.
Personally, I'm a bigger fan of the SNES-gen than the Sony-gen. Yeah, there's some orchestration going on for VIII and IX, but that seems limited to just the cut scenes. They still sound MIDI-ish (not that I don't like MIDI-ish sounds, I do like the SNES-gen better) except for the great solo piano tracks like "Julia".

I have an unhealthy obsession with FFVIII songs, FFT songs--I had logged over 90 hours in one of my saves--and Aeris' theme (dunno why, I just like it much).
