I don't get it. Did you dump the Colosseum ROM to your computer, then edit the pictures and run it in an emulator?

Did you just edit the screenshot?

Or is ol' Winston an Easter egg in the real game?

Close. Well as a matter of fact there is no emulator which is capable of running commercial games (and it's still a long way until that's possible). So what i did was
1. ripped the iso
2. Extracted a few files and reversed them (wrote some utilitis to convert gcgfx to png and vice versa)
3. Well and then i uploaded it to gcn again. The screenshot was made by filb (www.filb.de) because i don't own a tv capture card.

Not anymore. There is an emulator that can run many games for the GCN. But only Bust a Move perfectly, from what I understand.

(emphasis mine)

The hell?! You have a GC disc burner, or some 1337 cable bundle soldered to a homebrew circuit board in your Gamecube?

Cool stuff, I didn't know gamecube hacking had gone so far as to actually alter game content... I thought the gamecube was hard to hack, the discs being non-standard and spinning backwards and whatnot...

It's done through a security hole in Phantasy Star Online... You trick the Gamecube into talking to your computer and it thinks it's talking to a Sega Server...
