I've caught around 500 Rayquaza's, and each time his stats were influenced by the natures.
but is it possible to get a maxstat on -for example- defense when the pokémon's nature is hasty?

In the 500 I caught it wasn't the case, but on the other side, in the 500 I caught there were about ten with 2 or more maxstats...

So the bottomline is: do DV's get influenced by the Natures?

It's the Nintendo difference

Natures multiply one stat by 1.1 and another by 0.9.

For example, Naughty multiplies attack by 1.1 and special defense by 0.9.

It doesn't have any influence on DVs though.
