I want to use Pinsir but he doesn't learn much in terms of good moves.

These are the two movesets I thought up on my own, but they stink like and old litter box that hasn't been cleaned in three years.

slash
swords dance
body slam
submission or hyper beam

double team
rest
body slam
swords dance

Some better movesets and some strategies would be much appreciated.

Slash, Seismic Toss/Substitute, Swords Dance, Hyper Beam/Body Slam

Body Slam if playing on Stadium, Hyper Beam if on Gameboy.
Slash is decent move that requires no setup whatsoever. Good to use in a pinch. If you get some space to work with, perhaps through paralysation, Swords Dance up, and fire off some Hyper Beams. It only takes two dances to hit 999, and it'll do some fair damage running of that amount.
For fair, read 'bloody massive'.
Seismic Toss can hit the ghosts that the other two attacks cannot, or Substitute can absorb paralysis on Stadium that would otherwise slow this beast down.
Overall, Pinsir is a very underused pokemon with great sweeping potential.

Great sweeping potential is right. I killed half of Gandalfs team with this guy, of course freezing his Jolteon really helped with the SD process. From then on it was just hyper beam, faint, switch, hyper beam, faint, switch. You get the picture.

Gandalf tried using it only to get wasted by Molly. Sorry about that Gandalf...

Can I put any worthwhile defensive moves on him to improve survivibility? Sure he can hurt people but he can't take to much punishment before going belly up.

Survivibility the only problem Gandalf and I have had with the little bugger.

Oh and one other question. How many Pinsir slashes can Kazam survive without recovering? and which would do more damage, an un-aided hyper beam or slash? I don't have the time or effort the find this out on my own and I can only make assumptions.

Hyper Beam is 150, Slash is essentially 140 base. Slash should be used unless

1) You have SDed up

2) You're sure HB'll finish 'em off

or

3) Pinsir is near death and desperate for a CH.

And it should only take two slashes to down Kazam.

1) Pinsir isn't slow.
2) Speed has almost nothing to do with the viability of Double Resting.

Pinsir makes a pretty good DT/Rester, although I'd use him for all out attack.

The only thing Pinsir is good at is sweeping, but he's pretty darn good at it. In fact, I'd almost go as far as to say that he IS the perfect sweeper. I've decimated so many teams with this guy it's not even funny.
The moveset I use it

swords dance- self explanatoy
slash- use when not SD'd up
hyper beam- use it when SD'd up
submission- kind of a filler, but he
can trade his life for a Rhydon
or whatever if need be.
