So what's actually the difference between the stats of a shiney Pokemon and a normal Pokemon? Do the shiney ones have higher max stats, or higher IV's, or what?

Shiny Pokemon always have these IV's
HP 0 or 8
IV' can be as much as 15. For a Pokemon to be female, the Atk IV must be 8 or lower. Therefore, It's nearly impossible for a shiny Pokemon to be female. Also, Shiny Pokemon always have the same Hidden Power type.

Forgive me for barging in, but the above is incorrect. A shiny will have the "following" stats.
Attack will always be either 2, 3, 6, 7, 10, 11, 14, or 15.
Defense will always be ten.
Speed will always be ten.
Special will always be ten.
HP (hit points) will always be either zero or eight.

Also, Hidden Power does/can vary from Shiny to Shiny.
Since all other DVs (defense/speed/special must be 10, the only part of the formula that changes is the attack part)
Shiny Pokémon with an attack DV of
2 yields Grass 49 Power
3 yields Dragon 49 Power
6 yields Grass 49 Power
7 yields Dragon 49 Power
10 yields Grass 69 Power
11 yields Dragon 69 Power
14 yields Grass 69 Power
15 yields Dragon 69 Power
So all Shiny Pokémon will have a hidden power of either Dragon or Grass.
Also, on species that are 50/50 chance of being male/female, it is 0-7 for female and 8-15 for male from the attack DV. But realize this applies to not all Pokémon.
